Spicy Chicken Spinach Wraps is a very fast and delicious meal! The version below is family friendly and not overly spicy for the kids. Those who prefer a spicier wrap can always add a few more drops of the Hot Wings Buffalo sauce into their wrap.
Kid friendly tip! Young children may want to skip the tomato, onion and avocado. Mine enjoy the wrap with just the chicken, shredded cheese and sauce. While some children may be “put off” by the green wrap, let them know they really won’t taste the spinach. (Or tell them the spinach will make them strong like Popeye!) As an alternative, the chicken and toppings can also be served over rice.

Ingredients
For the chicken filling
- 1 lb boneless chicken breasts
- 1 Tbsp Franks Red Hot Wings Buffalo sauce
- 1 Tbsp white wine vinegar
- 1/2 cup chicken stock
For the sauce
- 1/3 cup mayonnaise
- 1 Tbsp Franks Red Hot Wings Buffalo sauce
- 1 Tbsp white wine vinegar
For the toppings
- 1 large tomato chopped
- 3 stalks green onion chopped
- 3/4 cup sharp cheddar cheese shredded
- 1/2 cup lowfat sour cream
- 1 avocado (mashed) or prepared guacamole dip
Wraps
- 1 package spinach wraps
Instructions
- Stir together 1 Tbsp of the Hot Wings Buffalo sauce, 1 Tbsp of vinegar and the chicken stock.
- Place chicken in instant pot and cover with the sauce from step one.
- Cook on manual high pressure for 10 minutes. After the cooking time has ended, allow 10 minutes for the instant pot to naturally release before opening the pressure valve.
- Meanwhile stir together all of the ingredients for the topping sauce and set aside.
- Chop the green onion, tomato and cheddar cheese and set aside.
- After chicken is done cooking, remove from instant pot and shred. Stir shredded chicken back into cooking sauce.
- Spread chicken, sauce, tomatoes, onions and shredded cheese on spinach wrap. Top with sour cream, avocado (or guacamole dip) and wrap together.
