This quinoa salad is one of my most asked for recipes. If I bring this salad to a potluck, I might as well bring the recipe right along with me since I have had to copy it so many times. I am glad to have it here on Joy Fit Mom now so that I can just direct friends right here!
Quinoa Salad Dip or Wrap
Quinoa Salad that is bursting with goodness and deliciousness in every bite!

Ingredients
- 1 cup quinoa uncooked
- 2 cups water
- 4 cloves garlic finely diced
- 6 Roma tomatoes (or 2 cups of any kind of tomato) diced
- 3 sweet or bell peppers, red, yellow or orange chopped
- 1 purple onion - medium diced
- 4 green onions - (use white and green parts) chopped
- 1 cup feta cheese crumbles
- 1/4 tsp pepper
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 bag tortilla chips or wraps
Instructions
- Rinse 1 cup quinoa in a strainer.
- Add quinoa to 2 cups of water. Bring to boil and reduce heat to low, simmering for 15 minutes. Cool.
- Stir together garlic, tomatoes, bell peppers, purple and green onions, feta cheese crumbles and pepper.
- Stir into mix the cooked and cooled quinoa.
- In separate bowl, mix olive oil and lemon juice and stir into quinoa mixture.
- Chill and serve with tortilla chips or in wraps. Leftovers (if you actually have any!) will keep well in the refrigerator.
