Kid friendly Beef Stew (Instant Pot)

Ingredients

  • 1 1/2 pounds Beef stew meat (Tri-tip cuts are super tender)
  • 1 tsp oregano
  • 1 tsp basil
  • 1/2 tsp thyme
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 1 tbsp Olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 pound baby carrots whole
  • 3 large potatoes cubed
  • 2 tbsp worcestershire sauce
  • 8 oz can of tomato sauce
  • 3 cups beef broth
  • 1 1/2 tbsp corn or potato starch
  • 1 1/2 tbsp water

Instructions

  • Cube meat and season with oregano, basil, thyme, pepper and salt.
  • Turn instant pot to saute function and add olive oil.
  • Add stew meat to instant pot and saute the seasoned stew meat until brown on all sides.
  • Add onion, garlic, carrots, potatoes, worcestershire sauce, tomato sauce and beef broth.
  • Seal instant pot and cook on high pressure for 30 minutes. Allow pressure to release for 10 minutes before opening steam valve.
  • Mix corn (or potato) starch in water and stir into stew to thicken.
  • Serve.  Leftovers keep well!
